I know this is a huge an convuluted topic, but as a general guideline, when I am in camera raw (PS) should I just leave the sharpening alone at this early stage, or completely wipe out the camera raw preset and deal with it in the full editing process in PS.

THEN.....should i deal with sharpening at the VERY end, or as I go along before/during contrast adjustments are also made?

I know there are 3rd party products out there to plug in..... BUT....the digital output things is getting so much like a Nobel project science fair, that i'm trying to tackle this issue simple at first.
